GRAPES: Sangiovese called in Montepulciano “Prugnolo gentile”, black Canaiolo, Colorino, Mammolo.

AGING: 2 years of aging in large Slavonian oak barrels.

FOOD PAIRING: mature pecorino cheese and goat cheese, Cinta senese cold cuts, handmade egg pasta with meat sauce like a chianina beef ragout or a wild boar one, game meat in general can perfectly pair with it either as a pasta dressing or a pot roast, a classic Fiorentina t-bone steak (rare would be the choice in Tuscany!), roast lamb, pork or beef.
