DESCRIPTION: young wine with a hawthorn, pear and peach bouquet.
GRAPES: Trebbiano, white Malvasia and Pulcinculo (Grechetto in Montepulciano).
AGING: 6 months in steel and cement barrels.
FOOD PAIRING: it goes very well with fish and seafood, both in a starter, with pasta or in a risotto, or as a main, grilled or roast, fish soups, fried chicken or beef and mild cheese.

A TALE OF WINE AND FOOD IN TUSCANY: When people come to Tuscany they almost never visit the Tuscan coast and it is understandable…But after a nice tour and tasting in our underground cellar you might plan to buy some bottles of this nice, crispy white and then drive past Pienza, through Val D’Orcia and Montalcino to our marina, rent a nice place by the beach and create the best setting to enjoy
this wine. The next morning you can go to the market and get some fresh seafood and maybe a brill or gilt head bream to bake.
Your meal could start with a typical “cacciucco”, which is a seafood soup made from shellfish, cuttlefish and octopus cooked with tomato sauce and then served on toasted garlic bread. Another great match for this well-structured white can be a marinated salmon or tuna, followed by a seafood risotto. The main can be the baked gilt head bream or brill with roast potatoes. Too much for one meal? Drink some limoncello and everything will be fine! In case this is all too elaborate, just open a chilled bottle of Tris, get some olives and medium pecorino cheese and enjoy your aperitivo!
