AGING: 2 years of aging in large Slavonian oak barrels plus 2 year of aging in small Slavonian and French oak barrels (barrique/tonneaux) plus 3 years min. perfecting in bottle before being available for sale.
FOOD PAIRING: mature pecorino cheese and goat cheese, Cinta senese cold cuts, handmade egg pasta with meat sauce like a chianina beef ragout or a wild boar one, game meat in general can perfectly pair with it either as a pasta dressing or a pot roast, a classic Fiorentina t-bone steak (rare would be the choice in Tuscany!), roast lamb, pork or beef. If the wine is balanced and ready to drink it goes perfectly with truffle dishes. The same pairings are valid or just enjoy a glass on its own to appreciate its balance and depth, perhaps with some 75% dark chocolate.
